Breakfast Sweet Potato

In addition to veggies at breakfast – this breakfast is a great source of protein first thing in the morning. Many cereals or other breakfast options are lacking protein, which makes this breakfast a great option! (Plus, it’s plant-based!)
Sweet potatoes also bolster the immune system, and with all of the screen time we get these days- sweet potatoes are great to include in the diet since they may slow aging by promoting good vision.
The neat thing about breakfast sweet potatoes is that they are 100% customizable! Try adding your favorite fruit, honey, or nut butter, and we know this will be a household breakfast favorite.
Ingredients:
- 2 medium sweet potatoes, washed
- 2 tablespoons natural almond butter
- 1 banana, sliced
- 1 cup blueberries
- 2 teaspoons hemp seeds
- Cinnamon
- Sea salt
Instructions:
- Preheat oven to 375 degrees F. Line a medium baking sheet with parchment paper or foil.
- Use a fork to poke several holes in the sweet potatoes, then place on prepared baking sheet and roast sweet potatoes for 45 minutes-1 hour or until fork tender. Remove from oven and allow to cool for 5-10 minutes.
- Once ready to eat, split the warm sweet potatoes open with a knife and sprinkle with a tiny bit of sea salt. Next drizzle 1 tablespoon of almond butter, 1 teaspoon of hemp seeds, along with banana slices, blueberries and finally a sprinkle of cinnamon in each sweet potato. Serve immediately.
