Chipotle Sweet Potato Chili

Who doesn’t love a soup or Chili on a cold day?
We cannot get enough of this Chipotle Sweet Potato Chili. It includes a bunch of superfoods as in cauliflower rice, onion, sweet potato, tomatoes, and other spices!
Now combine that with ground meat and you got yourself a hearty flavorful slow cooker chili, not to mention whole 30 friendly and paleo.
Ingredients:
- 2-3 Sweet Potatoes, peeled and chopped
- 1 lb Ground Beef
- 1 cup Yellow Onions, chopped
- 2 Cups of Beef or Vegetable Broth
- 14 oz Canned Diced Tomatoes
- 2-3 Cups of Cauliflower Rice
- 1 tsp minced garlic
- 2/3 cup Chipotle Salsa
- 1 tsp Cumin
- 1/2 tsp Paprika
- 1/2 tsp Chili Powder
- 1/4 tsp Black Pepper
- Salt to taste
- Fresh Cilantro and Jalapeños to garnish
Instructions:
- Chop and peel your sweet potatoes. Place in a microwave safe bowl and steam with 1 tbsp water in them for 3 minutes or until tender. Discard water.
- Brown the ground meat in a skillet and drain grease. Place meat on a plate. In the same skillet, saute onion until fragrant, about 2 minutes. Then place in browned meat and onion in the slow cooker.
- Add your broth, canned tomatoes, sweet potato, cauliflower rice, and mix all together.
- Add your seasonings and chipotle salsa.
- Stir and cook on high for 3-4 hrs. If you browned your meat prior then cooking time will be less, so check every hour.
- Garnish with fresh cilantro and optional jalapeno.
