Chorizo Taquitos

CHORIZO TAQUITOS

This is one of our favorites with its bold and satisfying flavors. Taquitos are portable and fun, so pack them for your next day at the sports park, or just a picnic outside. Typically taquitos are rolled and deep fried- but these are foolproof being gluten free, dairy free, paleo and grain free. Super healthy and sure to trick the whole family.

Ingredients:

  • 12 ounces Pork Chorizo remove from cassing if applicable
  • 1 cup Mushrooms sliced
  • 1 cup Yellow Onion diced
  • Avocado Oil
  • 12 8 inch Grain Free Tortillas I use Siete Cassava or Coconut
  • 1 lime
  • Salsa or Guacamole for serving
  • 1 tbsp E.V.O.O extra virgin olive oil

Instructions:

  1. Preheat oven to 400 degrees F & line a large backing sheet with parchment paper
  2. In a large skillet over medium-high, heat Avocado oil
  3. Add onion, mushroom, and chorizo
  4. Brown the chorizo until cooked through, about 10 minutes. Remove from Heat and Keep Warm
  5. In a small nonstick skillet over medium- high heat, heat 1 teaspoon of avocado oil.
  6. Quickly fry 1 tortilla at a time until flexible and easy to roll, about 30 secounds per side.
  7. Fill the tortiall with 2 table spoons of chorizo veggie mix, roll it up carefully, and place seam down on the pre-prepped baking sheet.
  8. Repeat with remaining tortillas adding more avocado oil as needed.
  9. Transfer the taquitos to the oven and bake until crisp and brown around the edges, about 20 minutes.
  10. Serve with your favorite salsa or guacamole.
  11. Enjoy!
