CUCUMBER SALMON LOW-CARB ROLL

If you like sushi or vegetable rolls that use smoked salmon, then you are going to absolutely love this cucumber salmon roll. It’s salty and creamy and crips all in every bite! For a light and refreshing snack (or small meal) with just enough flavor to satisfy, this easy appetizer is going to become a go-to favorite!

HOW TO MAKE THE ROLLS:

Wash and pat dry the cucumber then peel using a vegetable peeler.

Using the vegetable peeler or a mandolin slicer, slice 6 equal slices the length of the cucumber creating thin “sheets” of cucumber.

On a clean surface/cutting board, line the sheets of cucumber together side by side but overlapping slightly to form a solid sheet. Use 5 to 6 slices depending upon how large the cucumber was.

Spread sour cream over the top of the cucumber sheet, prinkle fresh parsley over the sour cream, and lay the smoked salmon over the top evenly. Add avocado slices to the side closest to you.

Carefully, starting closest to your body, roll the cucumber slices up and over the filling, pulling back against itself tightly until completely rolled.

KITCHEN TOOLS YOU'LL NEED:

  • Vegetable peeler and/or mandolin slicer – If using a mandolin, note that making thin slices can be dangerous with the sharp edges on the blades. Always use the safety cover.
  • Measuring spoons
  • Toothpick
  • While this is not technically a sushi roll, you may find the sushi tollers beneficial when making them. These little bamboo sushi mats are great for getting the rolls tight and secure.

FAQ

There is both cold and hot smoked salmon. Most smoked salmon you find in stores is hot smoked thus not raw. If you happen to come across cold smoked, then technically it is raw salmon. Both versions are safe to consume.

Smoked salmon once opened is good for up to 1 week in the refrigerator. When making this, I would recommend eating within the first 2 to 3 days for texture reasons, but it should be safe to consume for up to 1 week.

Absolutely! For many, dill is preferred in this but you can use whichever one works best for you and is readily available.

Depending upon your individual macros, this is definitely a keto-friendly food. Using full-fat sour cream (or cream cheese), is best if you are following a low-carb or keto diet and lifestyle.

Ingredients
  

  • 1 medium Cucumber
  • 2 oz Smoked Salmon
  • 3 tbsp Sour Cream
  • 1 Avocado sliced
  • 1 tbsp Chopped Parsley fresh
  • 1 tsp White Sesame Seeds
  • 1 tsp Black Sesame Seeds

Instructions

  • Spread sour cream over the top of the cucumber sheet.
  • Sprinkle fresh parsley over the sour cream.
  • Lay the smoked salmon over the top evenly.
  • Add the avocado slices to the side of the cucumber that is closest to your body.
  • Carefully, starting closest to your body, roll the cucumber slices up and over the filling, pulling back against itself tightly until completely rolled. 
  • Slice into 6 pieces. Secure each "roll" with a toothpick through the middle if needed.
  • Sprinkle the top with sesame seeds before serving.
