Here is what you need:

  • Spinach (or mixed greens of choice)
  • Fresh Fruit (of choice; mango and blueberries work delicious)
  • Red onion
  • Pecans
  • Cucumber
  • Fresh basil
  • Apple cider vinegar
  • Olive oil or avocado oil
  • Honey
  • Garlic
  • Sea salt and pepper

Ingredients
  

Ingredients for Salad

  • 6 cup Spinach or your choice of greens
  • 2 cups Fresh Fruit rinsed; we used 1 cup blueberries and 1 cup skinned and chopped mangos
  • 1/2 Large Red Onion
  • 1/2 Cucumber chopped
  • 1 cup Pecans chopped

Basic Basil Vinaigrette

  • 1 cup Basil Leaves loose
  • 1 clove Garlic crushed
  • 3 tbsp Honey *can use 3 tbsp coconut sugar for vegan option
  • 1/2 tsp Salt
  • 1/3 cup Apple Cider Vinegar
  • 1/2 cup Olive Oil extra virgin

Instructions
 

  • Layer your salad beginning with the spinach (or greens).
  • Place red onion and cucumber on top of the spinach.
  • Top with fruit and pecans.
  • Prepare dressing by placing all dressing ingredients into a blender or food processor, and pulse until smooth.
  • Toss salad dressing with salad.

Notes

Extra dressing can be stored in the fridge for up to 2 weeks.
