PROTEIN PANCAKES

After a conversation today with a client who is missing pancakes, we decided we had to deliver the healthy option for our athletes and nutrition clients.
 
Of course, we delivered! This recipe makes a heaping of pancakes that will most definitely keep you satisfied. It is also super and to make. This would be the perfect breakfast after a long run or ride, or just for healthy fun Saturday morning pancakes. Topped with fruit of choice!

Ingredients:

  • 1 ripe banana
  • 2 eggs
  • 3 tbsp vanilla protein powder
  • 1/4 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/4 tsp salt
 

Instructions:

  1. Mash the banana in a small bowl. Add the eggs and whisk to combine.
  2. Add the protein powder, cinnamon, baking powder and salt. Mix well.
  3. Heat a non-stick frying pan over medium heat. Spoon 1 tbsp size spoonfuls of mixture into the pan. Once bubbles start to rise on the pancake, flip over.
  4. Continue until all pancakes are cooked!
  5. ENJOY!
